My improvisation on Cary Kelly's recipe is as follows:
5 large eggs
2 cups dehydrated butter powder
2 TBSP allulose
1 TBSP vanilla
Mix all ingredients in a bowl at thoroughly as possible.
With buttered waffle iron on medium heat cook waffle for 5 minutes. You may need to adjust your cooking time based on your individual waffle iron.
Remove and eat. Add butter, or non sugar syrup, nut butter or whatever suits you.
One remarkable thing about these waffles is they reheat in the microwave very well. Traditional grain based waffles become rubbery in the microwave, but not the butter powder waffles.
I see butter powder in #10 cans (12 cups) on Amazon for about $35. I buy mine from Walmart for about $20.
